Recipe
Mixing:
1. Mix for 2 minutes slow, 6/8 minutes fast on spiral mixer. Dough temperature 27°C/80°F.
2. Conventional mixer 20-25 minutes.
3. High speed mixer 2-3 minutes.
Process:
1. Either through roll plant or into heads and through BDM. Place onto solid and/or lined trays.
Proving:
1. Prove at 32 - 35°C/90-95°F, 80 - 85% humidity for 45-60 minutes.
Baking:
1. Oven temperature 230 - 250°C/450-480°F.
2. Baking time - approximatively 9 minutes for baps, 10-12 minutes for batched soft rolls.
