Recipe
Mixing:
1. Spiral: Mix for 2 min slow, 6/8 min fast on spiral mixer. High speed: 2-3 minutes. Conventional: 20-25 minutes
Dough temperature 27°C/81°F
Process:
Either through BDM or process straight through a roll plant (S500 Controller only)
Proving:
1. Prove at 30-35°C/86-95°F, 80 - 85% humidity for 50-70 minutes
Baking:
1. Oven temperature 220-250°C/430-480°F
2. Baking time 8-15 minutes depending on size.
