Yeast 1.300kg 4%
Easy Spekkle 2.500kg 25%
Frialux 0.960kg 3%
Sugar 0.500kg 5%

Recipe

Dough temperature 26-27°C/78-80°F

1. Mix on 2 minutes slow and 8 minutes fast on spiral (or equivalent).
2. Scale immediately.
3. Hand-up, rest 10 minutes.
4. Divide/ mould on BDM.
5. Place on trays.
6. Prove 50 minutes approx.
7. Bake 50 minutes aprox.
