EASY CIABATTA - Toasted Focaccia Bread

| Water +/- | 1.950kg | 65% |
| Easy Ciabatta Mix | 0.300kg | 10% |
| Yeast | 0.045kg | 1.5% |
| Virgin Olive Oil | 0.045kg | 1.5% |
Recipe
1. Mixing - spiral 2 minutes on slow speed and 6-8 minutes on fast speed. Dough temperature 25°C/77°F.
2. High speed for 2½ - 3 minutes.
3. Rest for 10 minutes in bulk.
4. Scale at 2.000kg per 18 x 30 sheet.
5. Hand up and rest for 10 minutes.
6. Process through pastry break down to 3.5mm.
7. Place on a silicone papered 18 x 30 tray, and well dock the dough piece.
8. Brush with Olive Oil and sprinkle with herbs.
Prove for 30 minutes at 28°C 85%
Bake in a rack oven for 15 minutes at 210°C
Shape it in any way or thickness you like!
Try the tempting varieties of popular toppings: dried herbs, cheeses, tomatoes (sun dried tomatoes: chopped, hot paste, cold paste) and olives (dried back olive paste).
This is also a very suitable bread to make sandwiches with.
