Recipe

Mixing: 2 minutes on a slow speed; 6-8 minutes on fast speed.
Dough temperature: 25°C
Processing: Scale, hand up and rest for 10 minutes.
Mould and place into tins.
Prove 32-35°C / 80-85% RH for approx 45-50 minutes.
Bake with initial steam.
Oven temperature 210-230°C / 410-450°F.
Baking time approx 30-40 minutes depending on size of loaf.
Open damper after 15 minutes.
