| S5000 | 0.240kg | 0.75% |
Recipe
Dough Temperature 26-28°C/79-82°F.
Mixing
Spiral 2 minute slow and 6-8 minutes fast.
Conventional 20-25 minutes.
High speed 2.5 - 3 minutes.
Either through roll plant or into heads and through BDM.
Place onto prepared trays.
Prove 32-35°C/90-95°F, 80-85% humidity for approximately 45-60 minutes.
Baking guide
Oven temperature 210-250°C/410-480°F.
Baking time 8-12 minutes depending on size.
