| Fat/shortening | 1.300kg | 4% |
| Sugar | 0.640kg | 2% |
| Yeast | 1.120kg | 3.5% |
| Soft'r cotton | 0.640kg | 2% |
Recipe
Mixing:
1. Mix for 2 min slow, 6/8 min fast on spiral mixer. Dough temperature 26-28°C/79-82°F
Process:
Either through roll plant or into heads and through BDM. Shape as desired. Place onto prepared trays.
Proving:
1. Prove at 32-35°C/90-95°F, 80 - 85% humidity for approximately 45 minutes.
Baking:
1. Bake at 210-250°C/410-480°F
2. Baking time 8-12 minutes depending on size and variety.
