| Yeast | 1.000kg | 4% |
| Soft'r Soft Roll Concentrate | 2 sachets | 2% |
Recipe
Mixing:
- Spiral - 2 minutes slow and 6-8 minutes fast.
- High Speed - 2.5 - 3 minute slow.
- Conventional 20-25 minutes.
Process:
Either scale into heads and through BDM or process through roll plant.
Shape as round roll, fingers, baps or knots.
Prove 32-35°C/90-95°F 80-85% humidity for approx 45 minutes.
Baking:
Oven temperature: 220 - 260°C/430-500°F.
Baking time 8 - 12 minutes, depending on size and variety.
