Recipe


Dough temperature: 27°C/80°F

Spiral 2 minutes slow and 8 minutes fast or equivalent.

Scale immediately:

    350g/12oz for sticks
    60g/2oz for rolls
    80g/3oz for petit pain

Hand up, rest 10 minutes.
Mould onto trays.
Prove, approximately 40 minutes.
Bake.
