All ingredients
| Miami Yeast Raised Doughnut Concentrate | 16.000kg | 50% |
| Flour | 16.000kg | 50% |
| Yeast | 1.120kg | 3.5% |
| Water | 12.800kg | 40% |
Recipe
Mixing:
Spiral - mix 2 minutes slow and 6-8 minutes fast.
Conventional mixer 20-25 minutes.
High speed mixer 2.5-3 minutes.
Dough Temperature 25° - 27°C.
Process:
1. Either through a roll plant or into heads (rest for 10 minutes) and through the B.D.M.
2. Place onto frying screens.
3. Prove at 30°-32°C / 90°-95°F (80 - 82% humidity).
4. Proof time approximately 40-45 minutes plus approximately 20 minutes ambient to allow a skin to form.
Frying Guide:
1. Fryer temperature 180°-190°C / 360°-390°F.
2. Frying time approximately 1½ min. per side.
Finishing Guide:
When cool fill with jam and dip in Caster sugar.
Doughnuts made with Miami Doughnut are ideally finished with:
- Puratos' range of Icings (chocolate) and Fudge Icings (white, chocolate and caramel).
-Topfil fillings (apple, cherry, and strawberry).
