WORKING METHOD

Muffin Batter

Using a planetary mixer and beater, combine the Satin CC, eggs, oil, and water.

Mix on slow speed for 2 minutes then scrape down.

Mix on medium speed for 3 minutes, add the Smoobees and mix to combine.

Deposit the batter into lined muffin pans at 120g.

Top Temperature: 170°C

Bottom Temperature: 170°C

1 Litre Steam% Humidity
10% Water loss

Crumble

Using a planetary mixer and beater, cream the butter and sugar.

Add the flour and mix to form a crumble.

Scatter 5g over the muffins.

ASSEMBLING

Once the muffins have cooled inject with 10g of Vivafil Wild Blueberry.
