Spiced Christmas Waffle



  • Using a spiral mixer, mix for 4 mins slow and 6 mins fast.
  • Add remaining fat, cranberries & sugar pearls.
  • Dough temperature 26°c.
  • Bulk fermentation 10 mins at ambient temperature.
  • Shape round and place on greased tray final proof 60 mins. 32°C 85% HR 
  • Cook in waffle iron for 110 seconds at 190°C.
  • Decorate with icing sugar.
