Active liquid wheat sourdough for sweet goods
A fresh wheat sourdough based on the panettone starter culture is designed for sweet bakery products, such as brioche, Italian Panettone, sweet dough breads, viennoiserie and Danish.
Panetonne is one of the most famous Italaina breads, it is a rich brioche type of bread with delicious taste and aroma.
According to one legend its origins date abck to 1495, to celebrate Christman the duke of Milan invited all the towns nobility to a sumptuous banquet in his castle. The banquet lasted for several hours until it was time for dessert. However the dessert was burnt and the chef knew this could mean the death sentence! Luckily, a boy named Tony, who was an apprentice chef came forward and explained he had prepared a dessert containing raisins and candied fruit for himself and the servants of the castle. He gave it to the chef and this is how the 'Pani di Toni' arrived at the dukes table. Everyone found this bread delicious and ever since the Milanese always celebrate Christmas with a 'Panetonne
