High Street Baker SANDWICH Halloumi chilli jam focaccia



  • Chop 30g of coriander, add to 1 tbsp of capers, mix with the juice & zest of a large lime & 2 tbsp of olive oil then season to taste.
  • Use this to marinade the halloumi for at least 2 hours.
  • Slice the Focaccia piece in half horizontally, brush the inside of the top half of the Focaccia with chilli jam.
  • Drain the marinade, fry the halloumi in a hot non-stick pan without oil.
  • Lay the halloumi slices over the bottom piece of Focaccia.
  • Lay the broccoli stems over the halloumi, drizzle with a tbsp of the lime coriander dressing.
  • Replace the top piece of Focaccia.
  • Toast in a Panini press until piping hot.
