Coconut milk 0.160 kg
Classic Coconut 0.025 kg
Oatmeal 0.070 kg
Carat Cover White As required
Desicated coconut As required
Sweetsnow & glitter As required

Method

  • Using a planetary mixer & beater combine all of the coconut dough ingredients, mix on slow to form a dough, weigh into 30 & 60g balls & roll in coconut.
  • Place evenly spaced onto lined double baking trays.
  • Bake at 180˚C for 18 mins for small pieces & 22 mins for large pieces.
  • Once cooled dip the large pieces in Carat Cover White at 45°C, sprinkle with coconut.
  • Dip the small pieces & place on top of the large pieces & sprinkle with coconut.
  • Finish with Sweetsnow & edible glitter.
