Red Glaze
In a pan gently heat the ingredients until the sugar has dissolved.
Red Cake Batter
Using a planetary mixer and beater combine all of the ingredients and mix on slow speed for 2 minutes.
Scrape down and mix for a further 3 minutes on medium speed.
Assembling
Grease and line a standard 8" sandwich tin then add the red glaze ensuring the entire base of the tin is covered. Add the pineapple ring and glaze cherries, then top with the cake batter.
