Vegan Ginger Lemon Cake

Lemon glaze
Puratop White Icing | Patisserie 0.500 kg
Classic Lemon | Patisserie 0.025 kg
Citric acid solution (50%) 0.005 kg
Lemon glaze total 0.530

Method

  • Using a planetary mixer & beater combine the cake mix ingredients.                              
  • Mix on slow for 2 mins, scrape down. Mix for 3 mins on medium speed.                       
  • Deposit into greased loaf cake tins at 300g.                 
  • Bake at 170˚C for 40 mins.                   
  • Combine the lemon glaze ingredients and heat to 40°C.                        
  • Enrobe the cooled cakes with the lemon glaze & decorate with candied lemon peel.
