Vegan Ginger Lemon Cake



  • Using a planetary mixer & beater combine the cake mix ingredients.                              
  • Mix on slow for 2 mins, scrape down. Mix for 3 mins on medium speed.                       
  • Deposit into greased loaf cake tins at 300g.                 
  • Bake at 170˚C for 40 mins.                   
  • Combine the lemon glaze ingredients and heat to 40°C.                        
  • Enrobe the cooled cakes with the lemon glaze & decorate with candied lemon peel.
